A tasty Mediterranean Prawn recipe that is simple and easy to make by David Dawson of Auckland Hotel & Chefs Training School.
12 Shelled Prawns
100g Diced Red & Green Capsicum
4 Cherry Tomatoes
6 Basil Leaves (chopped finely)
2 Cloves Garlic (chopped finely)
60ml White Wine
8 Black Olives
2 Teaspoons Olive Oil
100g Crushed Tomatoes
Salt & Pepper To Taste
Heat olive oil in large pan (medium heat).
Sauté prawns, garlic, capsicum, cherry tomatoes (2 minutes).
Add white wine, crushed tomatoes, olives, basil.
Add cream and reduce until thickens.
Season with salt & pepper to taste (add chili if you like).
Serve with Rice (add pinch of Turmeric when cooking rice).
