Gummy Shark Tacos

Ingredients

Serves 4

  • Fresh Gummy shark (4x portions cut into a total of 8 strips)
  • Tortillas or Tacos x8
  • Shredded lettuce
  • Sour cream

Marinade

  • Juice of 1 lime
  • 1tblsp veg oil
  • Small handful of thyme
  • Small handful of basil

Salsa

  • 1x large tomato
  • ½ avocado
  • ¼ red onion
  • Handful coriander leaves (optional)
  • Salt and pepper
  • 1 tsp olive oil

MEthod

  1. Mix the marinade together and pour over flake fillets. Allow to marinade for 10 minutes
  2. Dice all the salsa ingredients, mix together with a drizzle of oil and season with salt and pepper
  3. Over med-high heat, pan fry the flake for 4 minutes (turning halfway)
  4. Layer the tacos starting with the lettuce, a fillet of flake, a generous serve of salsa and top off with the sour cream
