Hot Smoked Trout

Ingredients

Sweet Chilli Brine

  • 800ml cold water
  • 1/3 cup soy sauce
  • 1/3 cup sweet chilli sauce
  • 2 tbsp brown sugar
  • 1 tbsp ginger
  • 1 tbsp Worchester sauce
  • Sprinkle of chilli flakes (optional)
  • 1 tbsp salt

Hot Smoked Trout

  • 4x trout fillets (skin on)

MEthod

Combine all ingredients in a bowl except the salt and stir well.

In a shallow baking dish or tray, lay your trout fillets skin side down and sprinkle generously with the salt.

Let the fillets sit for 5 minutes and then pour the brine over the top.

Cover with cling wrap and place in the fridge.

After an hour, remove from fridge and flip fillets so that they are flesh side down.

Return to fridge for 5 hours.

Prepare your smoker as per instructions. I like to use pear or applewood chips as to not overpower the flavour.

Unlike many other recipes, I do not rinse the marinade off the fish, instead, pat dry with a paper towel and then place onto the smoker, skin side down to avoid the flesh sticking. Your fish is now ready for smoking!

With the smoker I use, once the metho burns out, the fillets are smoked in approximately 20 min. (Please refer to the instructions per your smoker).

Now, we could stop here and enjoy this delicious smoked trout with cheese, crackers, and a good drop of red but I want to take it one step further.
